For the Sauce:

  • 3/4 cup Coconut Secret Soy Sauce Substitute
  • 1/4 cup vegetable stock or water
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey (or to taste)
  • 1 tablespoon cornstarch
  • 2 cloves of garlic, minced
  • sriracha, optional

For the Stir Fry Noodles

  • 14 ounces stir fry noodles or udon noodles
  • 2 tablespoons Nutiva Organic Avocado Oil
  • 1/2 yellow onion, thinly sliced
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 cup mushrooms, thinly sliced
  • 6 ounces snap peas
  • 2 cloves of garlic, minced
  • green onion, to garnish


      1. In a bowl, combine all of the sauce ingredients and whisk until combined.
      2. Prepare the noodles according to the packaging instructions. Undercook the noodles by 2 minutes, as they will finish cooking in the sauce.
      3. Heat the avocado oil over medium-high heat. Add the onion and garlic and cook until fragrant, about 3 minutes. Add the broccoli, pepper, mushrooms, and snap peas, and saute for 4 minutes. 
      4. Add the sauce and bring to a simmer, then stir in the prepared noodles. Cook for 2-3 minutes, stirring until the noodles are fully cooked and the sauce has thickened.
      5. Garnish with green onions.
