Umami BBQ Cauliflower


Ingredients:

• 1 large cauliflower head
• 2 tablespoons Nutiva Coconut Oil Buttery Flavour
• Salt and pepper, to taste

For the BBQ Sauce:
• 1/2 cup Coconut Secret Soy Sauce Substitute
• 2 tablespoons tomato paste
• 2 tablespoons apple cider vinegar
• 2 tablespoons maple syrup
• 1 tablespoon soy sauce
• 1 teaspoon smoked paprika
• 1 teaspoon garlic powder
• 1/2 teaspoon onion powder
• 1/2 teaspoon ground cumin
• 1/4 teaspoon cayenne pepper (adjust to taste)

For Garnish:
• Fresh cilantro or parsley, chopped (optional)
• Toasted sesame seeds (optional)

      Instructions:

      1. Preheat your grill to medium heat or preheat the oven to 400°F (200°C) if you prefer to roast the cauliflower.

      2. Prepare the cauliflower by removing the leaves and outer stem. Rinse under cold water and pat them dry with a paper towel.

      3. In a mixing bowl, combine the Nutiva Coconut Oil Buttery Flavour, salt, and pepper. Toss the cauliflower in the oil mixture until evenly coated.

      4. If grilling: Place the cauliflower directly on the preheated grill grates. Cook for about 10-15 minutes, turning occasionally, until it is slightly charred and tender. If roasting: Place the cauliflower on a baking sheet lined with parchment paper. Roast for approximately 30-35 minutes, or until it is tender and golden brown.

      5. While the cauliflower is cooking, prepare the BBQ sauce. In a small saucepan, combine the Coconut Secret Soy Sauce Substitute, tomato paste, apple cider vinegar, maple syrup, soy sauce, smoked paprika, garlic powder, onion powder, ground cumin, and cayenne pepper. Whisk the ingredients together until well combined.

      6. Place the saucepan over medium heat and bring the mixture to a simmer. Reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, to allow the flavors to meld together.

      7. Once the cauliflower is cooked, remove it from the grill or oven and transfer it to a large pan. Pour the BBQ sauce over the cauliflower and gently toss until all is coated with the sauce.

      8. Return the sauced cauliflower to the grill or oven for an additional 2-3 minutes, just to allow the sauce to caramelize slightly.

      9. Remove from heat and let the BBQ cauliflower rest for a couple of minutes. This will allow the flavors to further infuse.

      10. Garnish the BBQ cauliflower with freshly chopped cilantro or parsley and toasted sesame seeds, if desired.

      11. Serve the BBQ cauliflower as a delicious appetizer or as a side dish. Enjoy!
