Easy RatatouilleServing Size: 4 - 6Prep Time: 20 min Cooking Time: 50 - 60 min Ingredients 2 Tbsp Organic Refined Coconut Oil1 large onion, chopped2 garlic cloves, minced3 cups diced canned tomatoes2 tsp dried oregano1 tsp dried thymelarge handful fresh basil, roughly chopped2 eggplants, thinly sliced2 zucchinis, thinly sliced2 yellow squashes, thinly sliced2-3 red bell peppers, thinly slicedsea salt, to tasteblack pepper, to taste Instruction Preheat oven to 375 degrees F.Heat oil in a large skillet. Add the onion and cook for 3-5 minutes, until translucent. Add the garlic and cook for a further 2-3 minutes.Add the tomatoes, oregano and thyme. Lower the heat and cook for 10-15 minutes, until thickened.Add the sea salt, black pepper and basil. Remove from heat and ladle into a round baking dish.Arrange the vegetable slices on top in any pattern you wish.
