Chocolate truffles are a crowd-pleasing holiday treat. Wrapped in a cute bag, they also make an excellent gift. This version is vegan, gluten-free and has the benefits of coconut oil (including medium-chain triglycerides and lauric acid). We used Virgin Coconut Oil for the coconut flavor, but you can also use Refined Coconut Oil for a neutral flavor.

ingredients

12 oz. dark chocolate, chopped

 

¼ cup Organic Virgin Coconut Oil

 

 ¾ cup coconut milk (full fat) or coconut cream

 

1 tsp. vanilla extract

 

 ¼ tsp. sea salt

 

To coat

 

½ cup cocoa powder OR ½ cup coconut flakes OR ½ cup slivered almonds

instructions

1. Using a double boiler, melt chocolate and coconut oil together, stirring continuously.

 

2. Add the coconut milk and whisk until smooth.

 

3. Remove from heat, then add the vanilla and sea salt.

 

4. Chill mixture for 2 hours or until set.

 

5. Scoop the mixture by the tablespoon, roll into a ball and then coat in cocoa powder, coconut flakes or slivered almonds.

 

6. Chill truffles for 10 minutes, then serve.

 

7. Store in a cool place. Makes about 24 truffles.
