4 cups diced seedless watermelon
2 cups diced melon (such as honeydew or cantaloupe)
2 cups diced cucumber
1/4 cup finely sliced shallots
1/4 cup chopped fresh mint
1/4 cup roasted peanuts, crushed
1 tsp toasted sesame oil
2 tbsp freshly squeezed lime juice
1 tsp maple syrup or honey
1/2 teaspoon red pepper flakes (optional)
- 1. In a large bowl, combine the diced watermelon, melon, cucumber, shallots, mint, and peanuts.
- 2. In a small bowl, whisk together the sesame oil, coconut aminos, lime juice, maple syrup or honey, and red pepper flakes (if using).
- 3. Drizzle the dressing over the fruit and toss gently to combine.
